These are a decadent summer treat and very easy to make once you have a mould to hand. They are incredibly tasty as they are, but if you wish you could try them with melted dark chocolate and chopped nuts or whatever topping takes your fancy.
Ingredients (makes 6 ice-lollies)
125ml melted coconut oil
210g smooth cashew butter
125ml maple syrup or honey (I prefer using maple syrup for this recipe, but each to their own)
2-3 tbsp cocoa / cacao powder (depending on how rich and chocolatey you like your ice-lollies)
Heat the coconut oil, cashew butter and maple syrup in a pot over a medium heat and stir / whisk until the mixture becomes completely smooth. Once smooth, remove from the heat and add the cocoa / cacao powder and stir in until well combined. Pour this mixture into your moulds and put into the freezer until frozen (usually takes about 1.5 – 2 hours)
Once you are ready to eat the ice-lollies, decorate as desired.
