Some children (and indeed some adults) can be reluctant to eat avocado and this is a good recipe to introduce this fruit into their diet. It can be used in lieu of commercial chocolate spreads or as a dip for fruit and vegetable crudités.
Ingredients
1 banana (ideally ripe to over-ripe if making for children used to the taste of commercial chocolate spread).
1 avocado
1 heaped tbsp. cacao / cocoa powder
Few drops of vanilla extract (optional and can be slowly reduced and then omitted once fussy palettes have become accustomed).
Destone the avocado and scoop out the flesh into a food processor before adding the remaining ingredients. Blitz until smooth and well combined. Transfer to a serving dish alongside fruit and/or vegetable crudités or use as a spread. Can be kept in the fridge in an air-tight container for up to 48 hours.
