Guacamole is an avocado-based dip, spread, or salad first developed by the Aztecs in what is now known as Mexico.
Ingredients
½ small red onion (roughly chopped)
2 ripe avocados
4 ripe cherry tomatoes
1 lime
extra virgin olive oil
Destone the avocados and scoop the flesh onto a chopping board along with the roughly chopped onion. Start chopping it all together until fine and well combined. Roughly chop and add the tomatoes, then continue chopping it all together. Add the juice from the lime and 1 tablespoon of olive oil and season to taste, if needed. Transfer to a serving dish along with crudités (carrot, cucumber, etc) or use as a spread or a tasty addition to your favourite salad.
