2 large leeks, roughly chopped
3 garlic cloves, crushed
3 small baby new potatoes, unpeeled and roughly chopped
1 400g tin of cannellini (or alternative) beans, drained and rinsed
750ml boiling water
Seasoning to taste
Sweat the leeks and garlic in a little water until they begin to soften (approx. 3 mins). Add the potatoes and beans along with the water and seasoning. Cover and allow to simmer for around 15-20 minutes. Remove from the heat and blend until desired consistency.
