Last month I offered a few ideas for al-fresco dining and this month I am concentrating on al-desko recipes as September brings the start of another school year. These lunch-box ideas are easy to make and can be taken to work or school:
Frittata – This is a great way to use up any Sunday lunch left-overs and are quick and easy to make. The recipe here includes regular potato but substituting this with any other starchy vegetable (e.g. sweet potato, butternut squash) gives an equally delicious result. Feel free to experiment with different combinations of vegetables to suit your own palette.
Falafels – If you’re looking for a healthier, tastier alternative to the usual ham / cheese sandwich look no further than the humble chickpea. Chickpeas are a nutrient-dense food containing protein, fibre and a multitude of vitamins and minerals. Eaten regularly they can support skin health, assist weight loss, support reproductive health, stabilise blood sugar levels and more.
Leek and Potato Soup – Soups are a great way to include more vegetables in your diet and are a very comforting food in the colder weather. This recipe substitutes cannellini beans for some of the potatoes as they are a good source of protein. Including protein with meals and snacks helps stabilise your blood sugar and energy levels and can assist with weight loss. Cannellini beans are also a source of the B-vitamins, iron, potassium and zinc amongst others.
